Sour cherries have many nutritional properties, although in about 82 percent they consist of water. The remaining 18 percent is a treasury of vitamins, minerals, antioxidants and other valuable ingredients. However, they are valued not only because of their pro-health properties. Sour cherries captivate with their original taste, but only those that grow in Poland. In our country, the temperature difference between night and day is so great that the cherries get sweet from the sun during the day and gain acidity at night. That’s why they have a delicious sour-sweet taste, in contrast to Spanish or Italian sour cherries. In turn, they owe their colour to anthocyanins – dyes from the group of flavonoids (strong antioxidants) that give colour to the fruit. The more of them, the stronger the colour of the fruit.
