Potato is grown in the vast majority of countries around the world. Tubers are valued for their nutritional and taste values. Starch is the basic nutrient, which, depending on the variety, constitutes from 12% to 21% of fresh tuber weight. The second important group of ingredients includes proteins and amino acids. In smaller amounts, soluble sugars are present in the tubers (glucose, fructose, sucrose – a total of about 1% of fresh weight), as well as fatty acids (up to 0,5% of fresh weight). Minerals, such as calcium, chlorine, iron, iodine or sulphur make up from 0,5 to 2% of tuber weight. Potatoes are also an important source of vitamin C, PP, B1, B2 and B6.
